During these confusing times, it can be difficult to rummage through your pantry and find something really good to eat. Cooking for yourself is not only fun but also creates the opportunity to make something super delicious. A recipe that is both easy and appetizing is Chicken Alfredo. This recipe serves about 4-5 people.

Ingredients:

1 Package Fettuccine Noodles

3 Whole Boneless Skinless Chicken Breasts

2 Tablespoons Butter

2 Tablespoons Olive Oil

Sauce:

1 Stick Butter

1 Cup Heavy Cream

2 Cups of Grated Parmesan Cheese

Salt and Pepper

Directions:

  1. Wash and cut your chicken breasts into bite-sized pieces.

  2. Heat two tablespoons of olive oil and two tablespoons of butter in a large pan over high heat. Add the chopped chicken breast in a single layer to the pan. Season the chicken with some salt and pepper. Don’t stir the mixture for about a minute or so to allow the other side of the chicken to brown.

  3. After about a minute or so, mix the chicken and flip it over. Allow the other side to brown and then continue to mix the chicken until thoroughly cooked. When done, take it out of the pan and put aside.

  4. Boil water and cook the fettuccine noodles for 8-10 minutes.

  5. In a pan over medium heat, melt the stick of butter and then add your heavy cream. Mix the two together and then add two cups of Parmesan cheese gradually. Mix the Parmesan cheese with the heavy cream and butter, allowing the cheese to melt. Let this mixture thicken.

  6. When done, mix the sauce with the noodles and grilled chicken. Toss them together to completely cover the noodles and chicken in sauce. Then enjoy!
